Old Fashioned Butterscotch Pie
Butterscotch Pie
Pie Filling Recipe
Preheat oven to 400 degrees. Prepare pie shell. Wisk sugar, cornstarch, salt, milk, heavy cream and yolks in pot over medium heat until ingredients thicken. Then add butter and vanilla. Wisk until thickened. Make sure you heat until thickened before putting into pie shell. Prepare meringue and place on top of pie filling. Cover high in middle and over lap meringue on top of crust.
1 c. dark brown sugar
1/4 c. cornstarch
1/2 t. salt
2 c. milk
2/3 c. heavy cream
3 egg yolks
add below after thickened:
3 T. butter
2 t. vanilla
Bake until meringue is brown to your taste.
Meringue Recipe
4 egg whites
1/8 t. cream of tarter (bring to a frothy stage)
add
4 t. sugar
1/2 t. vanilla
Bring to frothy stage again and place on pie.
9 Inch Pie Crust Recipe
Preheat oven to 375 degrees, bake 10 minutes.
1 c. AP flour
1t. Salt
1t. Sugar
1/3 c. Shortening
1/4c. Cold water
Fork holes in pie crust bottom and sides.
